Poster design for Chae’s Manneung Ganjang(seasoned soy sauce) for Food For Everyone. Chef Chae grew up watching her grandmother tend to the family’s Onggis — clay vessels that protect ferments through months of slow, careful transformation. Chae makes every condiment and ferment from scratch, meaning every dish at CHAE begins years before it reaches the table.

When I visited Chae, I was captivated by the onggi they use to brew up all their ferments. As the pots are really large (waist height) I wanted to make them very oversized in my composition. I created a small border featuring the soybeans that go into the onggi to ferment and become soy sauce. I utilised the burgundy glaze of the pots as my hero colour, plus the fresh green of soy beans as contrast. The cream comes from the colour of the soybeans as they are cooked.
